Espinaca Dip

I decided to go ahead and make my blog about cooking because its something that I truly enjoy doing.  My roommates and I are always trying to come up with something different to eat and are always looking at new recipes and trying new dishes.

I think a lot of students that live in Plymouth can agree that the town is lacking a true Mexican restaurant (unless there is one around that I don't know of, please let me know!).  I LOVE Mexican food.  A great Mexican appetizer which my roommates and I make quite frequently is Espinaca Dip.  It is pretty affordable, a crowd pleaser, and delicious!  My roommate Becca and I went through several trials of preparing this dip before we were satisfied.  Here is the final recipe:

1 16 oz. loaf of Velveeta Cheese with jalapeno cut into small cubes
1 can of Rotel tomatoes Mexican style with lime juice and cilantro
1/4 cup red onion minced
1 or 2 jalapenos (your preference) minced
1 handful of baby spinach roughly chopped

Heat pot over medium heat. Add all the ingredients and let melt! Serve with tortilla chips.
